Green Beans

with

Potato and Bacon

While on my trip to Trader Joe’s I grabbed these green beans, because hey, why not? I didn’t know what I was going to eat them with or how I was going to prepare them, but I took a shot in the dark and I made it, swoosh!!! I made a one pot, easy, green bean and potato dish that was delicious. Eat it alone or as a side dish. Enjoy.

Cook time: 1 hour, 10 mins

Prep time: 10 mins

The Ingredients:

  • Two gold potatoes

  • -Half sweet mayan onion

  • -Two tablespoon minced garlic

  • -Three slices bacon (if your vegan - I’m sorry, just kidding - hold the bacon)

  • -Seasoning of your choosing (see photo for what I used)

  • -EVOO - so seasoning sticks to potatoes

  • Trader Joe’s organic green beans (1 lb.)

Let’s Cook:

  • Preheat oven at 350

  • Cover, let cook for 25 mins

  • After cooking for 25 minutes, remove from oven.

  • Add washed and dried green beans, I snapped mine as I was adding them.

  • Stir in green beans and sprinkle a little more seasoning (whatever your heart desires) on top

  • Cover and place back in the oven for 45 minutes

  • After 45 minutes your green beans are ready!!!

  • Enjoy
