slap yo mama jerk shrimp & spinach

I absolutely love spinach and can eat at for every meal.

Ingredients:

One bag of frozen Argentinian shrimp from Trader joes (I like this shrimp because it is wild caught)

Bag a of raw spinach (1lb, you know spinach shrinks)

Extra virgin olive Oil (EVOO)

Not Your Mama’s seasoning

Island Jerk seasoning

The Deets:

  • Thaw shrimp in bowl of water in the refrigerator

  • Once thawed drain and dry

  • Add seasonings (liberally) and EVOO, I dont’t really use measurements I just eyeball it. Sprinkle on to cover but not to coat, if that makes sense. Mix with large mixing spoon

  • Let sit about five minutes while you grab your butter, garlic, and spinach

Let’s Cook:

  • Poor shrimp mixture into a nonstick sauce pan

  • Cook on medium heat

  • While shrimp is sautéing place butter and garlic in a separate sauce pan for spinach

  • Turn on spinach sauce pan to medium heat, add spinach

  • At this time both spinach and shrimp should be cooking in two separate pans on medium heat. Shrimp will begin to a bubble, that's perfect. Let shirmp continue to cook until its no longer see through, this will take about 8 minutes. By this time your spinach will have sauteed. Feel free to add a little Himalayan salt to your spinach to taste.

  • Make two servings
